Tropical Chia Seed Pudding

Happy Monday!! The sun is out and all I want to do is eat fresh fruits! I have been wanting to make some chia seed pudding for quite some time now. I've pinned just about every type of chia seed pudding recipe out there on Pinterest, but I still never got to making it.

So, when the sun peeked through this past weekend, I thought it was time! And seriously, I will be making this allllll the time now. It is a great, clean and healthy meal option and it's also perfect for your little one. Parker loves it!

Tropical Chia Seed Pudding
serves 2 and a 1/2 (a baby hehe)

4 tbs chia seeds
1/2 cups coconut milk (canned)
1 1/2 cups almond milk
6 drops stevia
Chopped mango, pineapple and unsweetened coconut shavings for the topping


Stir together the almond milk, coconut milk, chia seeds and stevia. 

Place in a container and set aside. 

Stir after about an hour to mix ingredients again. 

Let it sit overnight in the fridge or eat after about 2 hours of sitting. 

Place in small bowls and top with your tropical fruit and enjoy!

Day Trip: The Columbia Gorge (Family Style)

From Portland, you can hop right on the 84 East and drive about 20 minutes out to where the Northwest begins to really show off. It is such an easy day trip and really never gets old, which is why this is one of our top places to head for a quick getaway.

1. First stop - Wahclella Falls: Grab your Ergo carrier and off you go! This hike is the perfect distance to get some good exercise in, see a pretty view and navigate easily with a little one.

2. Now that you've worked up an appetite, keep driving the 84 East and grab lunch at Full Sail Brewing. I know there are a bunch of great places to eat in Hood River, but I still love Full Sail and how kid friendly it is. They have a good patio for when it is warm, their food is great (tempeh burger all the way) and I throw all my gluten free sensitivities aside and order a Session beer. It is my absolute favorite.

3. Grab a treat and coffee at Pine Street Bakery.

4. Then, before heading back home, make sure to do a quick stop at the Hood River Lavender Farms. It is SO worth a visit, even if it is a quick one.

I am so thrilled to be featuring the talented and beautiful, Christal from the Nutritionist in the Kitch blog! I typically find myself staring and drooling at her recipes while I'm at work. She's not only a healthy recipe magician, but she is also a practicing holistic nutritionist in Canada as well as a massage therapist. Yeah, she's that awesome! 1. Tell us a little bit about yourself, your blog, where you live, what you love to do : )

I live in Edmonton, Alberta, with my hubby and our little cat - we don't have any kids, yet.. but it's in our 5-year plan! I love to stay active, I'm at the gym 6 days a week or doing something active outside when it's nice, and I LOVE to travel - I've been to Southeast Asia, Central America, Western Europe, throughout the USA, and we have Eastern Europe in the plans for next year!
My blog is my space to really share my passion for nutrition, food, and healthy living! I'm a firm believer of the "you are what you eat" motto, and I truly try to fuel my body with fresh, wholesome, natural foods each and every day to keep my body feeling energized, healthy, and happy!
On Nutritionist in the Kitch, I can create and share recipes that do just that. My nutrition practice is wonderful! I get to work with clients who are looking to discover optimal health through the foods they thrive on, and seeing them do that is incredibly rewarding! My weight loss clients are especially rewarding as over a period of time I get to watch them transform, learn, and grow (or shrink, I should say! *;) (winking) . Nothing makes my day more than watching a clients face light up when they step on the scale and see what they've accomplished!

2. If you could give someone 5 main health tips to follow, what would they be? 

1) Eat whole, unrefined, natural foods 80% of the time, and allow yourself some indulgence 20% of the time - life is all about balance. 
2) Get your fiber - aim for at least 30g of fiber per day from whole grains, fruits, and vegetables! A happy digestive system is a great thing!
3) Keep moving - exercise should be part of EVERY DAY, even on 'rest days' you should be doing something like stretching or yoga - exercise should be like brushing your teeth - wouldn't go a day without it!
4) Love yourself - it's too easy to get down on ourselves and have negative self-talk all the time - every morning when you wake up, take a look in the mirror and compliment yourself!! Positive thinking leads to positive actions which lead to positive habits!
5) Sleep! It's so important to get quality sleep every night to fuel your body and support your immunity - aim for 7 hours every night!

Coffee Crumble Cake (Gluten Free + Vegan)

Happy Monday!!

I tried to wake up a little bit earlier today to get my morning started right: A cup of coffee, some coffee crumble cake and my notebook to jot down my to-do's for the week. (I'm such a nerd when it comes to to-do lists, but I honestly can't function without them!)

I'm typically an egg girl in the morning, but every now and then a pastry type food sounds so yummy with coffee. So, this morning I opted for some of the crumble cake I made yesterday.

When it comes to baking, I'd really rather just whip up something simple and know what ingredients are going into it. But, after I was accidentally introduced to the completely allergen free, all natural mixes by The Cravings Place, I am pretty much obsessed.

Quick and Easy Caprese Salad

With my husband gone the last few days, prepping a complicated meal was the last thing I was up for. Actually, I don't think I'm ever really up for something too complicated to cook (HA)... I'm all about ease, and even more so now that I'm a momma!

I don't make this regularly, but when I do, I LOVE IT. I love tasting the flavors and how simple, yet tasty they are - especially blended together. Plus, this is pretty healthy if you ask me. And if you are a sans-dairy person, this would be great with some cubed almond cheese.


carlsbad blogger Last week we took a break from the rainy Portland weather to catch some serious sun rays in Southern California. 80 degree weather to be exact. I love that my hometown is now a vacation for me. And I'm amazed at how much more I appreciate the things I took for granted growing up there.

Our first stop was Mexican food and the BEACH. Or, as I apparently inherited from my Portland living, "the coast." Parker couldn't believe his eyes when he saw the ocean. I'd imagine he was thinking that he was about to hop into the biggest bath he's ever seen. :)
